Coravin or half-bottles for pairings

I’m reworking our by-the-glass program to match a new 7-course tasting and debating a Coravin Timeless with the three-needle kit versus stocking 375s; we run about 30 BTG and hit 80 covers on Saturdays. For those aiming at precise food matches — say, Loire Chenin with scallop crudo or aged Barolo with duck — what’s been more reliable for freshness, guest experience, and waste control?

We ended up hybrid: Timeless (vintage needle) for slow movers like Barolo, but 375s for Loire Chenin and other high-aromatic whites — the first glass seemed livelier than a fresh Coravin pour, and guests love the ‘mini’ bottle on a pairing. Track capsule burn per night; once we crossed ~$0.90/5 oz, 375s were cheaper than gas for anything moving under 2 pours/day, which echoes @jason_reed24’s “watch argon costs.” Coravin’s great, but those capsules disappear faster than Saturday covers.

We run a similar BTG load, and the biggest win was a simple rule: 375s for high-aromatic whites with same-day turnover, Coravin for Nebbiolo and other slow movers, kept at 55°F between pours. For the Barolo pairing, we do a 0.5–1 oz ‘sacrificial splash’ into a ramekin for QC and the duck sauce, then the guest gets the next pour — noticeably brighter and still low waste. @s_greenleaf99 your note tracks; in our hands, tight temp control mattered more than the gadget.
